Instant Pot Happiness: Meat Sauce & Spaghetti Squash

Mmmmm…tried 2 fun things in my newish Pressure Cooker Instant Pot:  a simple meat sauce & separately cooked an entire spaghetti squash in it! Sooooooo….easy….soooo delicious!  Why did I wait so long to buy an Instant Pot?  Each meal I make impresses me more!

🔹This SkinnyTaste.com recipe for meat sauce & squash inspired me.  It cooks both the squash & sauce in the same pot, but I have the 6 quart and the two didn’t seem to fit together, so I didn’t want to chance an overflow situation.  I love the Skinnytaste site because her recipes have the SmartPoints listed which helps me decide what to make.  I always do my own calculations based on the ingredients I use.

🔹I did not have pecorino cheese, so I left that out and added the following:

-About a teaspoon of garlic powder, onion powder, and dried oregano

-Plus 2 tablespoons of 4c Parmesan grated cheese to the mixture.

Great taste in record time!

🔹Everything else was the same.  Came out to 4sp (on Weight Watchers Freestyle) per generous 2/3 cup serving of sauce according to recipe builder…but always best to calculate your own points/calories.  

I used this link from TheKitchn.com to figure out how to make just the Spaghetti squash in the Instant Pot.

 It was SOOO easy!  I really like Spaghetti Squash, but have no interest in making it in the oven.  You set the pressure cooker for about 15 minutes, so all in cooking time is about 30ish minutes (it warms up to the pressure cooking part).
