Optimism Strategies: 10 Ways to Let Sunshine Into Your Life ☀️

Optimism Strategies: 10 Ways to Let Sunshine Into Your Life ☀️

Each day, we wake up to a choice: embrace the day with positivity, or let our emotions get the best of us. Looking at the ‘sunny-side’ of life is a skill that can be learned and practiced, even for naturally pessimistic folks. I just wanted to share a few ideas for staying mindfully positive.

Happiness is easier to carry around than misery, so I do my best to limit my pity parties to as little time as possible.

Today only happens once & I do not want to waste it swimming around in a bad mood any longer than necessary. Staying positive is not easy, but I am always looking for ways to enhance my methods.

Sunshine can take on many forms, but in our personal journeys, sunshine can light up your day in the following ways:

  1. ☀️ Literally: Open every single shade in your home to let as much light in as possible. Natural light can fill your home with physical warmth & makes everything sparkle!
  2. ☀️ Figuratively: Sunshine can fill our soul with light, love, and joy! Natural sunlight brightens our moods as well as our homes.
  3. 😍I bet you have friends and/or family that bring extra sunshine into your life. Treasure them & send some light back their way.
  4. 💡Replace those broken lightbulbs. Why? Because you should be able to brighten your home at night as much as possible. Living in a ‘dark’ place isn’t motivating for anyone.
  5. 🍴Eat TASTY, GOOD food. HEALTHY food digests well & promotes happy good feelings in your whole body. You’ll feel satisfied & that joy brightens up anyone’s day!
  6. ❤️ Give of yourself because your whole heart will be filled with sunshine after you do.
  7. 🤣Laugh! Watch a comedy, go see a comedian, or read the Sunday Comics because when you laugh, you will feel light & bright!
  8. 👗👔👠Wear Brightly-Colored clothing as color totally affects your mood. We all like to wear black, but try a few days of days of bright colors and see how much bolder & brighter you feel!
  9. 👍 Chose to have a positive outlook because happy people glow from within & brighten everyone around them.
  10. ☕️ Drink Coffee (ok, maybe that one is just for me as coffee lights up my morning! 😂)

Tuck these ideas away for a day that you wake up feeling lackluster about the world. Consider creating your own optimism strategies for your ‘less-than-sunny’ days.

Two Treats One Recipe Warm Parfait or Frozen Crunch

One Recipe, Two Ways:🌷Warm Spring Parfait ♨️or ❄️Frozen Crunch Treat: Which way will you enjoy it?

Multitasking in the kitchen is always my preference, so having two options for this one simple banana almond chocolate chip cracker recipe totally works for me.

Now, it can work for you, too!  Sometimes I want something warm and gooey, but other times, I want something frozen.  I hope this inspires you to create what you need to satisfy your sweet tooth!  I give the recipe for only one person, but you can easily multiply the ingredients based on how many of these you want to make.  I think these beautiful parfaits would look good on a holiday meal table, too!

🌷Warm Spring Parfait ♨️or ❄️Frozen Crunch Treat

  • Prep Time: 5 minutes
  • Serves: 1
  • SmartPoints: 4 (and worth every single one)

  • 1 Tbsp slivered almonds
  • 1/2 Tbsp Mini-Semi-sweet chocolate morsels (Toll House)
  • 2 Club Crackers (Keebler)
  • Salt, pinch
  • 1 banana, sweet and mashed
  • 1 green apple (granny smith) mostly diced, with a few slices

🍌🍫🥜Main Mix is the same for Both Treats:

  1. Prepare small baking pan (I prefer a silicone pan for this) by spraying bottom with non-stick spray or canola oil.
  2. Mash banana (leave a slice for garnish) and set aside.
  3. In a separate bowl, crush crackers into small crumbs, add almond slivers, and chocolate chips.
  4. Mix dry ingredients into the mashed banana and add pinch of salt.
  5. Dice up most of the green apple and make a few slices for garnish.

🌷Spring Parfait:

  1. Add mixture to baking pan and spray top with canola oil.
  2. Bake in air fryer at 400 for approximately 5-8 minutes until warm and slightly browned (can be baked in oven as well for same amount of time).
  3. Alternate layers of diced apples and warm banana chocolate nut mixture.  Garnish with apple slice, banana slice, and one chocolate chip.enjoy a warm, refreshing treat!  This can be served at room temperature, or chilled, but is rather tasty all fresh and warmed.

❄️Frozen Crunch:

  1. Add mixture to small. prepared baking pan, spray top and freeze for 1 hour or more.
  2. Frozen treat will pop right out of the mold.  Use diced or sliced apple as garnish for this crispy frozen treat and serve immediately.

  • Always create your own recipe in the recipe builder for accurate point tracking.
  • The Orange Mini-Silicone Mold/Pan I used comes from Amazon.com X-Haibei Flexible 5″ MINI Round Cake Bread Mold Baking Pan Silicone Sandwiches Hamburgers Maker http://a.co/bPC4cH5
  • You could make this with pretzel bits, but you’ll need to recalculate the calories/smartpoints.
  • If this is made for Passover, substitute matzo for the crackers

Options are always great, so enjoy having options for this yummy, easy-to-make dessert for yourself OR your next gathering.

What recipes do you have that can be made in more than one way?  Let me know in the comments.

Take some time for yourself

🌻Anti-Grazing Strategies: Nurture Yourself With a Bit of ‘Me-Time’🌻

I am always looking for ways to keep myself from grazing my way through my kitchen and pantry. Over the past year, I have worked on many Anti-Grazing Techniques. Self-Care is one of my main ways to distract myself when the need to feed strikes. Stealing a few moments to nurture my mind, body, or spirit is a necessary part of my personal weight loss journey. Today is the first day of Spring & it seems fitting to chat about personal growth.

So, following my self-care logic, if you don’t carve out any ‘me time’, how can you properly nurture yourself? Living life ‘beyond the scale’ involves looking to things other than food for personal happiness and satisfaction. Seeds need fertilizer and fresh soil to grow, and just like seeds, we must attend to our own needs or we cannot continue to progress in our ever-evolving, lifestyle change.

🌺When is the last time you made time for yourself? 🌺
Make sure that you carve out time each day, or at the very least, each week, for yourself.

🌻Sooooo….What should you do during that time?
Here are a few ideas & please feel free to add your own ideas in the comments section:

  1. ⏱Take 5 minutes of Quiet to use for meditation, prayer, a cat-nap, or just sit in complete silence. It may not seem like much, but try to sit still for 5 minutes….it is harder than it sounds!
  2. 📚Read for 10 minutes. What to read? Read something that makes you happy. 1 chapter of a book. Set aside 10 minutes to read through a favorite magazine, blog, or an actual newspaper. Just read something just for you that doesn’t involve list-making, planning, or work.
  3. 💇💅Take some time to beautify…this applies to the guys, too! Go get a haircut or just get your hair done. Go get those highlights you have been wanting to try. Go get that manicure or pedicure you have been putting off. Make an appointment right now and put it in your calendar.
  4. ☺️Take time to relax…this is an obvious ‘me-time’ activity, but go get a massage or ask a friend for one or just go to the mall and sit in one of those massage chairs at Brookstone.
  5. 🤗Stretch! Take extra time to stretch at the gym. Download a stretch video. Look at Pinterest for stretching exercises. Take a relaxing yoga class. You’ll feel so fabulous afterwards.
  6. 💡Go to an extra Weight Watchers meeting. Yep. Maybe it has been a rough week and maybe an extra Weight Watchers meeting is just the thing you need to do for YOU this week. Online Only? Maybe just try out a meeting for a change of pace. Not doing Weight Watchers? Maybe spend a little extra time looking over what you are personally doing for health & fitness this week. See if you can come up with some new ideas to take your current routine to the next level.
  7. 🚶🚶‍♀️Pump up your normal walk by taking a walk in a NEW place…a garden, a different neighborhood…a change of scenery is good for your soul.
  8. 🎨Get Creative: Color…Doodle…Draw…Build…Create SOMETHING because flexing your creative muscles nurtures your brain, your heart, and your mind…it is also an excellent anti-grazing technique.
  9. 🤹‍♀️Play! If you have kids, it is easy, but even if you don’t, go to a video arcade or an amusement park. Just go do something that keeps you young at heart.
  10. 🎭Indulge in some local culture…a museum, a show, an arts festival. Just make the effort to go somewhere that will stimulate your mind, not your appetite.
  11. 🏀 Play a sport or go see a sporting event. Your mind will enjoy the distraction of the game and your body, obviously would enjoy the exercise or even the excitement.

Whatever you choose to do to nurture yourself should be non-food related. We do use food to nurture, but marching forward into Spring refreshed & renewed can be enhanced by taking a bit of ‘me-time’. Coming up with your list of how to nurture yourself can be part of your own anti-grazing strategy or just a way to be kind to yourself.

🌻What do you do when you have a bit of ‘me-time’?🌻

Air Fryer Crunchy Zoodles

Like Fried Onion Strings? Try these Amazing Air Fryer Zucchini & Butternut Squash Instead!

🔷2 Amazing Air Fryer Crunchy Veggie Zoodles!🔷

Recreating my favorite restaurant tastes and textures at home has been a mission of mine since the start of my weight loss efforts last year.  My goal in this latest air fryer experiment, was to make something that was similar to those crunchy onion strings you get on a burger, but without the added fat and calories.

Ding! These came out crunchier, but absolutely met my person goal of a fun, tasty topping for salads, burgers, or to just to eat the whole darn bowl!  When your crunch craving hits, consider making a this veggie hack.

  • 🥒And at 2 points per batch, these are a FUN and FABULOUS way to eat your veggies!🌶
  • ✨Recipes are similar…but both also met my standards of simple & easy.
  • ✨Use my ideas to come up with your own!

💥Important Notes:

  • -Always ADJUST time & temperature for your own machine
  • -Watch closely at the end to avoid ⚠️burning ⚠️your vegetables
  • -Zoodles really shrink during cooking, so expect a small cereal bowl sized amount of zoodles after cooking.
  • -Always calculate your own recipe in the Recipe Builder for accurate point tracking and you can save it for future reference under the ‘My Foods’ tab in the Weight Watchers app.

🔷2 Super Crunchy Amazing Air Fryer Zoodles!🔷

  • Cook Time:  14-18 minutes or 10-15 minutes
  • Prep Time:  4 minutes (plus spiralizing time)
  • Serves: 1-8…depends on how you use it.
  • SmartPoints:  Whole Batch is 2 sp 😁

〽️🥒Butternut Squash Strings (spiralized)

Approximately 1 pound of spiralized butternut squash zoodles (I usually buy mine pre-spiralized)

  • 1/2 cup diced onions (I used yellow, but red would add a nice color)
  • 1 tsp onion powder (optional)
  • 1 tsp garlic powder (optional)
  • 1 tbsp of pecorino/romano grated cheese
  • 1 tsp of Olive Oil
  • (salt is optional – I didn’t think it needed it)
  1. Spray air fryer basket lightly with olive oil spray
  2. Dry squash as much as you can to remove an extra water
  3. Toss all ingredients in a separate bowl until throughly mixed
  4. Bake at 390 for 14-18 minutes, tossing 2 times during the cooking process
  5. There is a fine line between crunchy and burned, so watch carefully at the end of the cooking time.  You can choose to cook at a slightly lower temperature for a longer period of time and then do the last few minutes at a higher temperature, but I have no patience for that!  😂 😂 😂

🌶🥒Spicy Zucchini Squash Chili Strings (spiralized)

  • Approximately 1 pound of spiralized zucchini squash zoodles (I usually buy mine pre-spiralized)
  • 1/2 cup diced onions (I used yellow, but red would add a nice color)
  • 1 tsp paprika
  • 1 tsp chili powder (or more)
  • 1/4 tsp black pepper
  • 1 tsp onion powder (optional)
  • 1 tsp garlic powder (optional)
  • 1 tbsp of pecorino/romano grated cheese
  • 1 tsp of Olive Oil
  • (salt is optional – I didn’t think it needed it)
  1. Spray air fryer basket lightly with olive oil spray
  2. Dry squash as much as you can to remove an extra water
  3. Toss all ingredients in a separate bowl until throughly mixed
  4. Bake at 390 for 10-15 minutes, tossing 2 times during the cooking process
  5. There is a fine line between crunchy and burned, so watch carefully at the end of the cooking time.  These cook up faster than the butternut squash.😂 😂 😂

I feel like this is a great use of the air frying technology.

Deep frying would be a zillion calories.

Enjoy eating your veggies, zoodle-style!

Life Strategies - Why Do I Track My Food Every Day?

Mindful Strategies: Why Do I Track My Food Everyday?

❇️I used to dread tracking until I realized that it wasn’t a chore, it was a lifesaver! ❇️

TRACKING every bite in my Weight Watchers app has made all the difference. There are many apps out there or just use paper and pencil, but knowing what you ate today can be the difference between success and failure in the weight loss universe!

🤔So, Why do I track every single day?

💠Because I know what not tracking looks like (see 2009)
💠Because it is the BEST of all the tools for helping me eat all the foods I want to eat, be satisfied, & NOT gain all the weight back.
💠Because tracking gives me data and since data is power, I get to have power over what I eat.
-This helps me be in charge of the food instead of feeling like the food has a magical power over me.
-Tracking Data can help me figure out WHY I gained, maintained, or lost weight….the memory of my last 7 days is just not reliable.
-Tracking Data is another way of journaling and chronicling our journeys.
💠Because tracking tells me if I moved today. 128 steps or 10,000? What DID I DO today? Tracking tells the tale even when I cannot tell it myself.
💠Because tracking helps us make informed, really great decisions about whether we want to have that extra helping or special dessert or not. If we didn’t track all our foods, then how can we truly know if we can have that extra cookie or even a 2sp snack?
💠Because when I track, I feel IN CONTROL of my food destiny!
💠Because when I track, I can see the flaws in my meal plan & save time and money by streamlining my choices.
💠Because when I track, I can use the tracker and points system to MY advantage for MY life! I do not have to fit into some pre-set, restricting diet plan, I track because I get to decide that I want half a Hershey bar today and a yummy omelette tomorrow.
💠Because when I do not track, my body knows anyway – so why not have the data to go with those calories?
💠Because I have tracked my way to a -47 pound loss & if a system isn’t broken, I am not going to fix it.
💠Because you will get used to tracking. It is very routine now after 15 months on SmartPoints.
💠Because I deserve to be in control of what I eat and tracking gives me that strength and adds to my willpower!
💠Because tracking is empowering & is like a secret willpower weapon against all those unknowns out there.
💠Because I am worth fighting for and if tracking my food for the rest of my life is something I have to do not to succumb to the evils of obesity, then So. Be. It.

❗️❗️I choose to track because there is no tool as powerful as your own data!❗️❗️

👍Be strong today! Use every single tool at your disposal!📲💻🏋️‍♀️🚶🏃‍♀️💃🕺

What does your before, during, and after photo look like?
Let’s do this, people! We are sooo worth it!

Here’s a little #throwbackthursday photo comparison that would not have been possible if I had not been tracking my food since January 2016. I do these side by side photos to help me stay accountable to myself. Looking back once in a while reminds me not only how far I have come in my weight loss efforts, but how much I strongly I want to maintain my loss.

2009: Headed out to a holiday party and HATING my outfit.
2017: Today. Loving whatever I put on…even horizontal stripes and a clingy turtleneck!

Air fryer beef tips

10 Minute Air Fryer Beef Tips & Steamed Broccoli

Just a quick post for a quick meal!

Sometimes, you just want something filling, quick, and delicious!  How’s 10 minutes or less until a hot dinner sound to you?

🔹Air Fryer Beef Round Tips with onions🔹

▪️Prep Time: 3 minutes
▪️Cook Time: 8-10 minutes at 360
▪️Serves: 4
▪️SmartPoints: 5sp per serving (but always calculate your own in the Weight Watchers Recipe builder based on the ingredients you use)

  • 1 pound of uncooked top round beef cubes (but you can really use any cubed beef)
  • 1 tablespoon Lea & Perrins Worcestershire Sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 diced yellow onions
  • 1 teaspoon of Olive Oil

1. Spray bottom of air fryer with olive oil spray
2. Tenderize beef cubes (I usually do this in a plastic bag or under some plastic wrap) You can choose to cut them smaller depending on how you purchased them.
3. Mix all ingredients in a bowl until throughly combined.
4. Toss into air fryer and spread them out nicely.
5. Bake at 360 for 8-10 minutes. Time can vary based on your machine & how well you want the meat cooked. We like Medium Rare.
6. Enjoy! I like to serve meat with a steamed vegetable such as Steamfresh’s broccoli.

Divide into 4 servings.

The beauty of the air fryer is that you get so much flavor from the 1 teaspoon of Olive Oil. Also, I seem to be getting very consistent results instead of the varied results when I grill things myself. Cleaning the air fryer seems to go very fast. Sometimes, I do put a little dawn and water in the pot and let it soak before cleaning, but all in all, it has been quick and wonderful!!!

Quick and Cute Air Fryer Crustless Quiche

Quick & Cute Crustless Quiche (Made In 8 Minutes In Your Air Fryer!)

I have been making all kinds of eggs almost daily in my air fryer. I am going to try to share some of my favorites this week. I shall start with what I call a ‘fancy omelette’ also known as a crustless quiche. We do eat with our eyes first, so sometimes, it is nice to dress up your food.

🔹Air Fryer Ramekin Quick & Cute Crustless Quiche🔹

(You could make this as an omelette, too!)

Air Fryer Crustless Quiche for 2 Quick Reference Guide

Air Fryer Crustless Quiche for 2 Quick Reference Guide for easy ‘fancy’ eggs! 7-8 minutes at 400 in your air fryer.

(to make the above image bigger, click on the circle image on the bottom of this post)

You’ll need to adjust your ingredients, and possibly the cooking time, for the size and type of ramekin you use. My ramekins are big ones as I only wanted to buy them once.

(They were bought a few years ago from Sur La Table with Chocolate Lava Cakes in mind)

A traditional quiche would have a crust & I may try one in the future, but I wanted to try a fancier version of an omelette I have made many times. I suppose these could be baked in an oven, but I am not sure of how long I would cook it…besides, no preheating with the air fryer.

🍳Recipe Serves 2🍳

🔹Air Fryer Ramekin Quick & Cute Crustless Quiche🔹

  • Prep time:  5 minutes
  • Cook time:  7-9 minutes @400, but always adjust time and temp to your own air fryer.

  • 🥚6 oz egg whites
  • 🧀1 tbsp pecorino romano cheese
  • ▪️1/4 cup diced fresh scallions
  • 🔸1/4 cup diced asparagus (cooked is ideal or warm them in the air fryer for a few minutes prior to adding them to the egg mixture)
  • 🔹Pinch of salt
  • 🔸1/2 garlic clove, minced
  • 🥔1/2 cup of simply potatoes shredded hash browns (or just shred potatoes)
  • 🧀1/4 cup of Sargento Reduced Fat Mozzarella Cheese (trader joe’s lite mozz is less points if you have it handy)
  • 🍅1/4 cup diced fresh tomatoes

  1. Spray 2 Ramekins with canola or any non-stick spray
  2. Mix up egg whites, vegetables, potatoes, cheese, & seasonings.
  3. Bake in air fryer 7-8 minutes at 390-400.
  4. Let them sit in the air fryer for a few minutes after the timer goes off.
  5. Ramekins get EXTREMELY hot, so use caution picking these up & out of the basket.

🍳SmartPoints:  Mine came out to 3sp each, but always calculate your own in the recipe builder of the Weight Watchers app or use a recipe builder such as the one found on www.myfitnesspal.com   (click on images below to make them bigger)

Baked Sriracha Onion Rings: The Recipe I didn't want to post

The Recipe I Didn’t Want To Post: Baked Sriracha Onion Rings

😜The recipe I didn’t want to post, but it is too tasty to keep to myself!

🌶Sometimes, you just want an onion ring or something ‘fried’!🌶

But as we all know, deep fried foods are not inline with a healthier diet, so I am always on the prowl for great taste at a lower caloric price.  Now, my newfound love of air frying jumpstarted my culinary creative juices into my own version of spicy onion rings.  You can buy pre-made onion rings/veggies & that is obviously easier, but if you want to have a little fun and make them yourself, then I am listing the recipe.

I was hesitate to post a healthier recipe for this (you can find a zillion online).

Why?  Because, unlike most recipes, the measuring and tracking of your ingredients used, for this will require an extra step every time you make it. Baked Onion Rings or Baked Vegetables are not new, but when your goal is to make every calorie truly count, then making them yourself is a really big deal.

Please see my explanation below:

⚠️Two things to note on this recipe:⚠️

> ➡️Please calculate your own ingredients and save in the recipe builder as the size, amount, and type of ingredients you use for your baked veggies will affect the points and ANYTHING breaded could add up very quickly in the calorie/SmartPoint department.  (There is a recipe builder on the Weight Watchers app as part of their membership, but other sites of recipe builders as well, such as http://www.myfitnesspal.com/recipe/calculator)

> ➡️You may need a little MORE of the ingredients than you’ll actually use, so if you want to be exact with your points/calories, you’ll need to measure what you have left over and THEN calculate the SmartPoints or calories.

Why? Because when you are ‘dipping’ the flour, egg, and breadcrumbs, you need a little more than you’ll actually use.  So, I would actually DOUBLE the flour and the breadcrumbs amount listed below and then, as I say above, measure what is left at the end for more accuracy.  This is how I always do recipes like this so I can be as accurate as possible with hard-to-calculate ingredients.  Yes, it takes more time, but if you like the recipe you create, you only need to spend that time once. (Time well spent in my opinion).

Simple Crispy Cod:Oven baked or air fried

Air Fryer or Oven Baked Simple Crispy Cod

Reallllly simple crispy fish from a non-cook. I like it plain, my husband prefers it with some sort of sauce, but I am a true believer in what I call a ‘base’ recipe that you can use in many forms. Why Bake In An Air Fryer?

Why Bake in an Air Fryer?

Why Bake In An Air Fryer?

I just wanted to see how it worked, so I created a blueberry muffin recipe to try it out.

🤔But, it is a really good question!

➡️Maybe to make a smaller batches for portion control purposes? -Nah.  You can just make less in your regular muffin tins.

➡️Maybe because it cooks better in the air fryer? -Maybe.  I will have to bake more items in it to more fully answer that question.  Right now, I would say that if you know you ovens well, you could get the same result.

➡️Maybe because the air fryer is portable and your ovens are not? -Definitely!  I could see this being very useful in smaller apartments that may not have an oven set up, camping, or just as a novelty to bring to a friend’s house.

👩‍🍳I will say that the muffins I made (recipe below) came out perfectly with a moist consistency and nice crisp tops.  My Farberware air fryer is not huge, so I did four at a time, but probably could have done 5, but I wanted good air flow.

WILL I bake again in the air fryer?  MAYBE…but probably only if I want to use it as an extra ‘oven’ so I can bake more at the same time.  I plan to get a second air fryer, so when I can bake larger batches, it is possible I will bake as it does an excellent job.

❇️Oh-So-Good Air Fryer Blueberry Kodiak Muffins❇️

(Prep is the same for a toaster or regular oven.)

  • 1/2 tsp vanilla extract
  • 1/2 cup fresh blueberries (size & amount of blueberries can affect the yield)
  • 2/3 cup Kodiak Power Cakes Whole Grain Buttermilk Flapjack & Waffle Mix
  • 1.5 teaspoons of baking powder
  • 1 tsp cinnamon

  1. Whisk dry ingredients first in large bowl
  2. Whisk wet ingredients in medium sized bowl
  3. Add wet to dry and mix until smooth
  4. Fold in blueberries
  5. Divide batter into the 10 silicone baking cups 3/4 full (you do not need to spray silicone cups, but if you are baking in oven, you should use liners or spray the tin.  I like silicone cups because they make a perfect small size.

  7. Or Bake in oven or toaster oven for 18 minutes at 350.  Bake a little longer for darker, crispier tops, but depends on your oven. they may need to stay in a little longer to get a crispier muffin top.
