Mmmm. A great omelette & breakfast fills me up for hours! 🍳🍳🍳I always think I don’t have the time, but many days, I really do! I just have to nudge myself to nurture myself.

  • 4 oz liquid egg whites (1sp)
  • 1 tsp olive oil (1sp)
  • 2 ounces pre-cooked grilled skinlesschicken breast with herb seasoning (by my air fryer this weekend) (1sp)
  • Minced broccoli, onions, & 1 clove of garlic (0sp)

🍏Equals 3 glorious filling sp!

PLUS

  • Half serving of Air fryer Cauliflower (0sp)
  • Fresh Cauliflower tossed with 1 tsp of olive oil is 1sp for whole batch, but I only had half.
  • Bake at 400 for 16-20 minutes, tossing 2-3 times.

PLUS

A beautiful garnish of clementine, cherry tomatoes, and a few green apple slices (0sp).

EQUALS

🕰Total time in kitchen: 20 minutes from opening the fridge to sitting down to eat. And that includes making the coffee in my Nespresso maker.

😁Taking the time (on some days) to make a filling, fabulous breakfast is totally worth it!

Quick & Cute Crustless Quiche (Made In 8 Minutes In Your Air Fryer!)

I have been making all kinds of eggs almost daily in my air fryer. I am going to try to share some of my favorites this week. I shall start with what I call a ‘fancy omelette’ also known as a crustless quiche. We do eat with our eyes first, so sometimes, it is nice to dress up your food.

Air Fryer Crustless Quiche for 2 Quick Reference Guide for easy ‘fancy’ eggs! 7-8 minutes at 400 in your air fryer.

You’ll need to adjust your ingredients, and possibly the cooking time, for the size and type of ramekin you use. My ramekins are big ones as I only wanted to buy them once.

(They were bought a few years ago from Sur La Table with Chocolate Lava Cakes in mind)

A traditional quiche would have a crust & I may try one in the future, but I wanted to try a fancier version of an omelette I have made many times. I suppose these could be baked in an oven, but I am not sure of how long I would cook it…besides, no preheating with the air fryer.

🍳Recipe Serves 2🍳

🔹Air Fryer Ramekin Quick & Cute Crustless Quiche🔹

  • Prep time:  5 minutes
  • Cook time:  7-9 minutes @400, but always adjust time and temp to your own air fryer.

Ingredients:

  • 🥚6 oz egg whites
  • 🧀1 tbsp pecorino romano cheese
  • ▪️1/4 cup diced fresh scallions
  • 🔸1/4 cup diced asparagus (cooked is ideal or warm them in the air fryer for a few minutes prior to adding them to the egg mixture)
  • 🔹Pinch of salt
  • 🔸1/2 garlic clove, minced
  • 🥔1/2 cup of simply potatoes shredded hash browns (or just shred potatoes)
  • 🧀1/4 cup of Sargento Reduced Fat Mozzarella Cheese (trader joe’s lite mozz is less points if you have it handy)
  • 🍅1/4 cup diced fresh tomatoes

Instructions:

  1. Spray 2 Ramekins with canola or any non-stick spray
  2. Mix up egg whites, vegetables, potatoes, cheese, & seasonings.
  3. Bake in air fryer 7-8 minutes at 390-400.
  4. Let them sit in the air fryer for a few minutes after the timer goes off.
  5. Ramekins get EXTREMELY hot, so use caution picking these up & out of the basket.
