Amazing Air Fryer Asparagus

🌱Amazing Air Fryer Asparagus!

FINALLY! I have found a way to make asparagus in my air fryer!!!! (And not kill it!)

Instructions:
▪️I used about a half cup of asparagus (0sp)
▪️Sprayed the air fryer bottom of basket with olive oil spray
▪️Sprayed the asparagus with olive oil.
▪️6 minutes at 360 in the air fryer. No tossing.
YUM! They were crisp and lightly browned on the outside. Completely cooked, but not wilted.

Sirloin steak (3oz for 3sp) was done at 390 for 9 minutes after being brushed with olive oil. Check out how I made filet mignon in my Air Fryer Nirvana post.

I gave myself 1sp for the oil used. It is 1sp per tsp of olive oil….and even though my amount may not have added up to that point, I tend to err on the side of tracking that point anyway.

So, 4sp and about 10-20 minutes to a grear dinner. I made this steak yesterday & reheated it for 40 seconds on high in my microwave while the asparagus finished cooking, so only 10 minutes to my filling dinner!!!

Some Green Notes:
🌱Thicker Asparagus are better than skinny ones.
🌱Make sure they are washed and dry.
🌱One layer is best because you will NOT need to shake or toss during cooking time. But you CAN do a larger batch, but you’ll need a longer cooking time of 9-15 minutes depending on your machine.
🌱Always calculate your own SmartPoints/Calories based on the ingredients you use & adjust time and temp to your own machine.
🌱Oven cooking takes more time and tastes different to me (not better just different). I will still make these in the oven when I have 40 minutes at 400 to roast them (because I like them that way, too), but some nights, speedy is better!! YAY! I usually steam them when I am in a hurry, but not tonight!

😊👍6 minutes works for me! I am the only asparagus eater in the house. Faster than the 40 in my oven.

Two Treats One Recipe Warm Parfait or Frozen Crunch

One Recipe, Two Ways:🌷Warm Spring Parfait ♨️or ❄️Frozen Crunch Treat: Which way will you enjoy it?

Multitasking in the kitchen is always my preference, so having two options for this one simple banana almond chocolate chip cracker recipe totally works for me. 

Now, it can work for you, too!  Sometimes I want something warm and gooey, but other times, I want something frozen.  I hope this inspires you to create what you need to satisfy your sweet tooth!  I give the recipe for only one person, but you can easily multiply the ingredients based on how many of these you want to make.  I think these beautiful parfaits would look good on a holiday meal table, too!

🌷Warm Spring Parfait ♨️or ❄️Frozen Crunch Treat

  • Prep Time: 5 minutes
  • Serves: 1
  • SmartPoints: 4 (and worth every single one)

Ingredients:

  • 1 Tbsp slivered almonds
  • 1/2 Tbsp Mini-Semi-sweet chocolate morsels (Toll House)
  • 2 Club Crackers (Keebler)
  • Salt, pinch
  • 1 banana, sweet and mashed
  • 1 green apple (granny smith) mostly diced, with a few slices

🍌🍫🥜Main Mix is the same for Both Treats:

  1. Prepare small baking pan (I prefer a silicone pan for this) by spraying bottom with non-stick spray or canola oil.
  2. Mash banana (leave a slice for garnish) and set aside.
  3. In a separate bowl, crush crackers into small crumbs, add almond slivers, and chocolate chips.
  4. Mix dry ingredients into the mashed banana and add pinch of salt.
  5. Dice up most of the green apple and make a few slices for garnish.

🌷Spring Parfait:

  1. Add mixture to baking pan and spray top with canola oil.
  2. Bake in air fryer at 400 for approximately 5-8 minutes until warm and slightly browned (can be baked in oven as well for same amount of time).
  3. Alternate layers of diced apples and warm banana chocolate nut mixture.  Garnish with apple slice, banana slice, and one chocolate chip.enjoy a warm, refreshing treat!  This can be served at room temperature, or chilled, but is rather tasty all fresh and warmed.

❄️Frozen Crunch:

  1. Add mixture to small. prepared baking pan, spray top and freeze for 1 hour or more.
  2. Frozen treat will pop right out of the mold.  Use diced or sliced apple as garnish for this crispy frozen treat and serve immediately.

Notes:

  • Always create your own recipe in the recipe builder for accurate point tracking.
  • The Orange Mini-Silicone Mold/Pan I used comes from Amazon.com X-Haibei Flexible 5″ MINI Round Cake Bread Mold Baking Pan Silicone Sandwiches Hamburgers Maker http://a.co/bPC4cH5
  • You could make this with pretzel bits, but you’ll need to recalculate the calories/smartpoints.
  • If this is made for Passover, substitute matzo for the crackers

😜The recipe I didn’t want to post, but it is too tasty to keep to myself!

🌶Sometimes, you just want an onion ring or something ‘fried’!🌶

But as we all know, deep fried foods are not inline with a healthier diet, so I am always on the prowl for great taste at a lower caloric price.  Now, my newfound love of air frying jumpstarted my culinary creative juices into my own version of spicy onion rings.  You can buy pre-made onion rings/veggies & that is obviously easier, but if you want to have a little fun and make them yourself, then I am listing the recipe.

I was hesitate to post a healthier recipe for this (you can find a zillion online).

Why?  Because, unlike most recipes, the measuring and tracking of your ingredients used, for this will require an extra step every time you make it. Baked Onion Rings or Baked Vegetables are not new, but when your goal is to make every calorie truly count, then making them yourself is a really big deal.

⚠️Two things to note on this recipe:⚠️

> ➡️Please calculate your own ingredients and save in the recipe builder as the size, amount, and type of ingredients you use for your baked veggies will affect the points and ANYTHING breaded could add up very quickly in the calorie/SmartPoint department.  (There is a recipe builder on the Weight Watchers app as part of their membership, but other sites of recipe builders as well, such as http://www.myfitnesspal.com/recipe/calculator)

> ➡️You may need a little MORE of the ingredients than you’ll actually use, so if you want to be exact with your points/calories, you’ll need to measure what you have left over and THEN calculate the SmartPoints or calories.

Why? Because when you are ‘dipping’ the flour, egg, and breadcrumbs, you need a little more than you’ll actually use.  So, I would actually DOUBLE the flour and the breadcrumbs amount listed below and then, as I say above, measure what is left at the end for more accuracy.  This is how I always do recipes like this so I can be as accurate as possible with hard-to-calculate ingredients.  Yes, it takes more time, but if you like the recipe you create, you only need to spend that time once. (Time well spent in my opinion).

Simple Crispy Cod:Oven baked or air fried

Air Fryer or Oven Baked Simple Crispy Cod

Reallllly simple crispy fish from a non-cook. I like it plain, my husband prefers it with some sort of sauce, but I am a true believer in what I call a ‘base’ recipe that you can use in many forms. This fish is great as a fish ‘sandwich’ because the top is so crispy. It is not oily, just crispy. Yum! Enjoy!

🐟Air Fryer Simple Crispy Cod🐟
(Or oven)

This is a great base crispy fish that you can add any sauce you want. Grill up or steam some veggies & poof! Dinner!

💠Air Fryer Cooktime:
Preheat for 3 minutes
400 for 8-12 minutes
Serves: 4
SmartPoints: 3 per 5oz filet
Always put your own ingredients in the recipe builder. 😊
💠(Can also cook in oven at 400 for 12-15 minutes, follow all other directions)

Recipe for:
🐟Air Fryer Simple Crispy Cod🐟

💠Ingredients:
20oz uncooked Atlantic cod, 4 cod filets, defrosted🐟
4 tbsp Bread Crumbs, Plain
1 Tbsp fresh lemon juice🍋
1 egg, beaten
1 pinch table salt
1 pinch black pepper
1 tsp lemon zest 🍋 1 pinch of parsley optional
Canola Oil Spray
Optional: any seasoning you like

💠Instructions:
1. Preheat air fryer for 3 minutes at 400, spray basket to prevent sticking
2. Lay defrosted fish out in pan or bowl. Squeeze a bit of lemon juice on cod filets
3. Beat 1 egg & pour egg mixture over filets
4. In a separate small bowl, mix up the breadcrumb mixture
– 1/4 cup of breadcrumbs
– 1 tsp parsley
– a pinch of salt/pepper
– optional lemon zest
– optional seafood seasonings
6. Sprinkle breadcrumb mixture over the cod filets, spray tops with quick canola oil spray
7. Bake for 8 minutes, take out and spray tops with canola oil spray, and cook another 4 minutes until top is crispy.

Easy & yum! 😊👍

Why Bake In An Air Fryer?

I just wanted to see how it worked, so I created a blueberry muffin recipe to try it out.

🤔But, it is a really good question!

➡️Maybe to make a smaller batches for portion control purposes? -Nah.  You can just make less in your regular muffin tins.

➡️Maybe because it cooks better in the air fryer? -Maybe.  I will have to bake more items in it to more fully answer that question.  Right now, I would say that if you know you ovens well, you could get the same result.

➡️Maybe because the air fryer is portable and your ovens are not? -Definitely!  I could see this being very useful in smaller apartments that may not have an oven set up, camping, or just as a novelty to bring to a friend’s house.

👩‍🍳I will say that the muffins I made (recipe below) came out perfectly with a moist consistency and nice crisp tops.  My Farberware air fryer is not huge, so I did four at a time, but probably could have done 5, but I wanted good air flow.

WILL I bake again in the air fryer?  MAYBE…but probably only if I want to use it as an extra ‘oven’ so I can bake more at the same time.  I plan to get a second air fryer, so when I can bake larger batches, it is possible I will bake as it does an excellent job.

Recipe:

❇️Oh-So-Good Air Fryer Blueberry Kodiak Muffins❇️

(Prep is the same for a toaster or regular oven.)

  • Prep Time:  10 minutes
  • Air Fryer Cook Time:  18-20 minutes at 320
  • Oven Cook Time:  18 minutes at 350
  • Serves:  10
  • SmartPoints:  1 SmartPoint per muffin

(But always calculate your own points in recipe builder)

Ingredients:

🔹🔹🔹

  • 1 teaspoon of sugar
  • 1 pinch of salt
  • 3 tablespoons of unsweetened applesauce
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh blueberries (size & amount of blueberries can affect the yield)
  • 2/3 cup Kodiak Power Cakes Whole Grain Buttermilk Flapjack & Waffle Mix
  • 1.5 teaspoons of baking powder
  • 1 tsp cinnamon
  • 6 ounces of water

Instructions:

🔹🔹🔹

  1. Whisk dry ingredients first in large bowl
  2. Whisk wet ingredients in medium sized bowl
  3. Add wet to dry and mix until smooth
  4. Fold in blueberries
  5. Divide batter into the 10 silicone baking cups 3/4 full (you do not need to spray silicone cups, but if you are baking in oven, you should use liners or spray the tin.  I like silicone cups because they make a perfect small size.
  6. Bake in batches (depending on the size of your air fryer) for 18-20 minutes at 320.  Toothpick should come out clean.
  7. Or Bake in oven or toaster oven for 18 minutes at 350.  Bake a little longer for darker, crispier tops, but depends on your oven. they may need to stay in a little longer to get a crispier muffin top.
  8. Best served warm so the blueberries burst into your mouth!
  9. Would pair nicely with vanilla halo top ice cream or as a breakfast side.

🍗More like ‘air-baked’ in a super juicy way!❤️

Tonight, I learned that some air fryer recipes can save me TIME & turn out just a little bit tastier!
(recipe at bottom)

😃So, Besides my delicious 2sp air fryer shrimp melt (see previous post), I also made cornflake chicken in the air fryer tonight AND the toaster oven so the family could do a true comparison. I can only fit 4 chicken drumsticks in my 3.2 quart Farberware air fryer, so I wanted to make the rest at the same time….

The family agreed that the chicken in the AIR FRYER edged out our traditional oven cooked version that I have made for years.

🤔WHY? Because the air fryer version of my traditional cornflake chicken was so juicy, it almost squirts at you! 🤣One of my kids pointed out that the cornflake crust was evenly cooked all around instead of a little mashed down and squished on one side (which when I remember to use a wire rack, I can avoid that, but I usually skip it as it would be one more thing to clean).

BUT another reason my traditional recipe gets a big plus in my book was because it only takes ❇️20 minutes❇️ in the air fryer, but it takes approx. 45 minutes at 350 in my toaster oven.

 ⏲Time saving AND juicy? Oh, yeah!

RECIPE:

🔹Cornflake Chicken Drumsticks🔹

🔸Prep Time: 10-15 min
🔸Cook time: 20 minutes in air fryer at 370, 45 minutes in oven
🔸SmartPoints: 13sp for 2 chicken drumsticks or 7sp for 1
(always put your own info into the recipe builder for accuracy)
🔸Serves: 4 with two pieces per person

Ingredients:

  • 8 chicken legs
  • 1/4 cup Wondra (or any flour)
  • Salt & Pepper
  • 2 Eggs
  • Splash of Milk (up to 2 tbsp of skim or any milk)
  • 2 cups cornflakes (I used Kellogg’s)
  • Cooking spray or I like Canola Oil Spray

Instructions:
1. Spray air fryer with canola oil spray
2. Use 3 bowls for dipping the chicken into:
1. Wondra with a little salt and pepper
2. Whisk the two eggs & milk
3. Crush the two cups of cornflakes
3. Wash & Dry defrosted or fresh chicken drumsticks
4. Dip each in flour mixture, then the egg mixture, and finally, coat with the cornflakes
5. Place into air fryer leaving a little space around each one for air flow.
6. Spray the tops with canola oil spray (or similar)
7. Bake at 370 for 10 minutes, then pull out basket and flip each piece over, respray the tops and bake for 10 more minutes or until juices run clear.

🔆Then, get out a napkin because these chicken legs will be super duper juicy! Enjoy!

Additional Oven Instructions:

  • Preheat oven to 350.
  • Bake 40-45 minutes or until juices run clear
  • Spray Pan with non-stick spray or line with parchment paper
  • If you have a wire rack that fits inside the baking pan, you can use that as well, but spray it first so nothing sticks to it.

👩‍🍳Someday I will leave the kitchen…someday when I get tired of air frying! Oh, my! I have been having a blast learning how to use this new gadget. I love a tool that can make my life easier and better….and tastier! Oh, how fabulous! Just had to share!

🔹Disneylady’s Cornflake Chicken Boneless Thighs🔹
Air Fryer or Oven
(If you need a lot of them, you’ll have to make them in the oven, but the air fryer rocks and is easier to clean than a giant pan and wire rack)

SmartPoints: 8 sp for 2 thighs or 4 sp for 1 thigh
(But always calculate your own ingredients in the recipe builder as the weight of the raw thighs will vary with every package you purchase)

8 boneless, skinless chicken thighs (approx 2 lbs)
1/4 cup Wondra (or any flour)
Salt & Pepper
2 Eggs

🔹General Air Fryer Instructions:

4. Dip each in flour mixture, then the egg mixture, and finally, coat with the cornflakes
5. Place into air fryer leaving a little space around each one for air flow.
6. Spray the tops with canola oil spray (or similar)
7. Bake at 370 for 9 minutes, then pull out basket and flip each piece over, respray the tops and bake for 7-9 more minutes or until juices run clear. Baking time depends on how thick they are.

🔆These make GREAT chicken sandwiches or as a main entree! Juicy and delicious! Crunchy and a joy to eat!!! YUM!!!!

💠Additional Oven Instructions:
Follow all the same prep directions…
Preheat oven to 350.
Bake 20-30 minutes or more…..or until juices run clear. Cooking time depends on thickness of the chicken thighs.
Spray Pan with non-stick spray or line with parchment paper
If you have a wire rack that fits inside the baking pan, you can use that as well, but spray it first so nothing sticks to it. Nice to flip them halfway through cooking.
