🔷2 Amazing Air Fryer Crunchy Veggie Zoodles!🔷

Recreating my favorite restaurant tastes and textures at home has been a mission of mine since the start of my weight loss efforts last year.  My goal in this latest air fryer experiment, was to make something that was similar to those crunchy onion strings you get on a burger, but without the added fat and calories.

Ding! These came out crunchier, but absolutely met my person goal of a fun, tasty topping for salads, burgers, or to just to eat the whole darn bowl!  When your crunch craving hits, consider making a this veggie hack.

  • 🥒And at 2 points per batch, these are a FUN and FABULOUS way to eat your veggies!🌶
  • ✨Recipes are similar…but both also met my standards of simple & easy.
  • ✨Use my ideas to come up with your own!

💥Important Notes:

  • -Always ADJUST time & temperature for your own machine
  • -Watch closely at the end to avoid ⚠️burning ⚠️your vegetables
  • -Zoodles really shrink during cooking, so expect a small cereal bowl sized amount of zoodles after cooking.
  • -Always calculate your own recipe in the Recipe Builder for accurate point tracking and you can save it for future reference under the ‘My Foods’ tab in the Weight Watchers app.

🔷2 Super Crunchy Amazing Air Fryer Zoodles!🔷

  • Cook Time:  14-18 minutes or 10-15 minutes
  • Prep Time:  4 minutes (plus spiralizing time)
  • Serves: 1-8…depends on how you use it.
  • SmartPoints:  Whole Batch is 2 sp 😁

〽️🥒Butternut Squash Strings (spiralized)

Approximately 1 pound of spiralized butternut squash zoodles (I usually buy mine pre-spiralized)

  • 1/2 cup diced onions (I used yellow, but red would add a nice color)
  • 1 tsp onion powder (optional)
  • 1 tsp garlic powder (optional)
  • 1 tbsp of pecorino/romano grated cheese
  • 1 tsp of Olive Oil
  • (salt is optional – I didn’t think it needed it)
  1. Spray air fryer basket lightly with olive oil spray
  2. Dry squash as much as you can to remove an extra water
  3. Toss all ingredients in a separate bowl until throughly mixed
  4. Bake at 390 for 14-18 minutes, tossing 2 times during the cooking process
  5. There is a fine line between crunchy and burned, so watch carefully at the end of the cooking time.  You can choose to cook at a slightly lower temperature for a longer period of time and then do the last few minutes at a higher temperature, but I have no patience for that!  😂 😂 😂

🌶🥒Spicy Zucchini Squash Chili Strings (spiralized)

  • Approximately 1 pound of spiralized zucchini squash zoodles (I usually buy mine pre-spiralized)
  • 1/2 cup diced onions (I used yellow, but red would add a nice color)
  • 1 tsp paprika
  • 1 tsp chili powder (or more)
  • 1/4 tsp black pepper
  • 1 tsp onion powder (optional)
  • 1 tsp garlic powder (optional)
  • 1 tbsp of pecorino/romano grated cheese
  • 1 tsp of Olive Oil
  • (salt is optional – I didn’t think it needed it)
  1. Spray air fryer basket lightly with olive oil spray
  2. Dry squash as much as you can to remove an extra water
  3. Toss all ingredients in a separate bowl until throughly mixed
  4. Bake at 390 for 10-15 minutes, tossing 2 times during the cooking process
  5. There is a fine line between crunchy and burned, so watch carefully at the end of the cooking time.  These cook up faster than the butternut squash.😂 😂 😂

I feel like this is a great use of the air frying technology.

Deep frying would be a zillion calories.

Enjoy eating your veggies, zoodle-style!

Baked Sriracha Onion Rings: The Recipe I didn't want to post

The Recipe I Didn’t Want To Post: Baked Sriracha Onion Rings

😜The recipe I didn’t want to post, but it is too tasty to keep to myself!

🌶Sometimes, you just want an onion ring or something ‘fried’!🌶

But as we all know, deep fried foods are not inline with a healthier diet, so I am always on the prowl for great taste at a lower caloric price.  Now, my newfound love of air frying jumpstarted my culinary creative juices into my own version of spicy onion rings.  You can buy pre-made onion rings/veggies & that is obviously easier, but if you want to have a little fun and make them yourself, then I am listing the recipe.

I was hesitate to post a healthier recipe for this (you can find a zillion online).

Why?  Because, unlike most recipes, the measuring and tracking of your ingredients used, for this will require an extra step every time you make it. Baked Onion Rings or Baked Vegetables are not new, but when your goal is to make every calorie truly count, then making them yourself is a really big deal.

Please see my explanation below:

⚠️Two things to note on this recipe:⚠️

> ➡️Please calculate your own ingredients and save in the recipe builder as the size, amount, and type of ingredients you use for your baked veggies will affect the points and ANYTHING breaded could add up very quickly in the calorie/SmartPoint department.  (There is a recipe builder on the Weight Watchers app as part of their membership, but other sites of recipe builders as well, such as http://www.myfitnesspal.com/recipe/calculator)

> ➡️You may need a little MORE of the ingredients than you’ll actually use, so if you want to be exact with your points/calories, you’ll need to measure what you have left over and THEN calculate the SmartPoints or calories.

Why? Because when you are ‘dipping’ the flour, egg, and breadcrumbs, you need a little more than you’ll actually use.  So, I would actually DOUBLE the flour and the breadcrumbs amount listed below and then, as I say above, measure what is left at the end for more accuracy.  This is how I always do recipes like this so I can be as accurate as possible with hard-to-calculate ingredients.  Yes, it takes more time, but if you like the recipe you create, you only need to spend that time once. (Time well spent in my opinion).

Air Fryer Nirvana: JUICY filet mignon & JUICY Cornish Hens

Hello, Air Fryer Nirvana! 🔴LIfe-Changing JUICY filet mignon & Life-Changing JUICY Cornish Hens 🔴 made separately in my little 3.2 quart Farberware Air Fryer?

Hello, Air Fryer Nirvana! Why?  Because the air fryer made these meats better than I ever have!!!

(4 Recipes at bottom of post)

👍My previous air frying recipes this week didn’t prepare my family, or me, for the beyond-juicy & tasty-deliciousness we encountered with tonight’s meal!  I am not sure words can do these home-cooked meals justice, but here it goes:

🍽I made filet mignon in my air fryer and it is probably the best steak I have made all year.  Almost no gristle and each bite was tender & overflowing with juices.  I served it with my air fryer hash browns and air fryer carrot chips.

🍗Then, I made 2 Cornish Hens (in separate batches) and they were both the juiciest and most delicious chickens I have ever had in my own home.  The skin was completely crispy on the outside and again, overflowing with juices in the inside.  It was BETTER than the 2 rotisserie chickens I buy every week.

🔴I said, “this air fryer thing is game-changing!”🔴

But it was one of my daughters who said,

“NO, MOM, these dinners are LIFE-CHANGING!!  They are just so amazing!”

She’s right because the road to better meals at home

just made a sharp turn into Tasteville, USA and we are never going back.

😉I am not a chef.  I only want to cook easy, quick things that taste delicious.  I love a good gourmet meal like anyone else, but I have 3 kids and an unofficial degree in short-order cooking. I joined Weight Watchers last year and I’ve lost -47 pounds and my journey to healthier, smarter eating is on a straight path to goal & maintainence.  The ability to cook something insanely delicious like this has me so very excited for all the future possiblities.

I am also including the recipes for the 🥔Hash Brown/Potato Pancakes as they were a delicious side dish and could be used for breakfast or dinner.  The 🥕carrot chips still need work, but I am including my recipe, but am open to any ideas you may have on how to make them better (just list in the comments below).  Making the carrot ships was a nice way for me to eat a bunch of carrots.

👩‍🍳Here are my oh-so-simple recipes:
